Healthy Tacos? Yes, they do exist!

Ingredients:

  • 2 tablespoons LIV extra virgin olive oil
  • 250g lean ground beef
  • 1 tablespoon taco seasoning
  • 6 whole-wheat tortillas
  • 2 small avocados (or 1 large avocado), cubed
  • 1 tomato, diced
  • ½ red onion, diced
  • 2 green onions, chopped
  • ¾ cup low-fat plain Greek yogurt
  • 1 cup grated Tex Mex cheese
  • ½ lime
