- 1 tablespoon LIV99 extra-virgin olive oil with lemon
- 1 lb penne pasta
- 3 tablespoons lemon juice
- Zest of 1 lemon
- 1 cup green peas
- 1 cup grated Parmesan cheese
- ¼ cup labneh
- Greens from 1 green onion, diced
- Salt and pepper to taste
Bring a large pot of salted water to the boil. Add pasta and cook for 7 minutes. Reserve 3/4 cup cooking water and drain pasta. Return pasta to saucepan.
Stir in ¾ cup pasta water, lemon juice, lemon zest, peas, black pepper, Parmesan, lemon zest, labneh, green onions and LIV99 extra-virgin olive oil with lemon. Simmer ingredients over low heat for 2 minutes.
Finish with pepper and more Parmesan to taste.
